Finding Passion in the Kitchen

I grew up in a household where both my parents loved cooking which meant, I never had to cook.

(Shameless Plug: they run a catering business, Engson Catering, specializing in Filipino Food. Inquire within!)

Before going Paleo, I absolutely hated cooking. I loved to bake, but I loathed cooking. I always thought it was too time consuming and tedious. I hated helping my mom or dad meal prep, but I had to do it, there was no other option — unpeeling egg roll wrappers, snapping long green beans, slicing onions whilst tearing up, chopping up veggies and the list goes on. It felt like a chore. You never love anything if it feels like a chore. 

Enter Paleo.

When I started experimenting with the Paleo diet back in 2011, I was forced to spend time in the kitchen. I was trying to look for shortcuts, but knew I would only cheat myself. There was only one solution: Learn to cook. 

I researched. I googled Paleo recipes regularly and came across a few blogs that inspired me. Sometimes I couldn’t believe some of the recipes I came across, they blew my mind!

I have developed such a passion for all things related to Paleo and cooking. I love re-inventing my mom or dad’s Filipino dishes and making them Paleo Friendly. When I’m not saving lives during a 12-hour shift, I’m at home spending time in my kitchen. It`s almost therapeutic.

A lot of people have asked me, “How do you have time?” Simple: You make time. When you’re passionate about something, it doesn’t feel like a chore. Now if I can only find passion in cleaning up the kitchen…


Here is my first recipe share. Paleo Japchae, a famous Korean Dish. This dish is made with Sweet Potato Noodles. Two ingredients: sweet potato starch and water — looks paleo friendly to me!

  • Servings: 3-4
  • Time: 20 mins plus 1 hr marinade
  • Difficulty: Moderate

Ingredients

2 tsp wheat-free tamari (coconut aminos okay)
2 tsp sesame oil
1 tsp rice wine
1/2 tsp white pepper
1/2 tsp salt
2 cloves garlic, minced
1/2″ ginger, peeled and minced
1/2 lb rib-eye or sirloin steak, sliced into strips
1 tbsp chicken broth
1 tsp honey
1/2 bunch (4oz) spinach or Chinese cabbage (kai-lan pictured above)
6oz sweet potato noodles, cut into 6″ lengths
1 tbsp coconut oil
1 carrot, julienned
3 shiitake mushrooms, fresh or reconstituted dry (soaked for 30 mins in warm water)
4 green onions, cut into 4″ pieces
1 tbsp toasted sesame seeds, divided

1. Mix the tamari, sesame oil, rice wine, white pepper, salt, garlic, and ginger, then combine half of the resulting sauce with the beef strips and marinate for 1 hour. Combine the other half of the sauce with the chicken broth and honey and set aside.

2. As the beef marinates, prep the other ingredients. In a stockpot, bring some water to a boil. Parboil the spinach for 30 seconds, then remove with tongs, rinse, and squeeze until mostly dry. In the same water, gently boil the sweet potato noodles for 5 minutes, then drain and rinse with cold water; they will start to harden, which is fine. Toss the noodles with a little sesame oil to prevent sticking, then set aside.

3. Warm the coconut oil in a wok on medium-high heat until shimmering, about 1 minute. Add the beef and stir-fry until cooked through, about 3 minutes, then remove the beef and set aside. Add the carrot to the wok and stir-fry until slightly softened, about 1 minute, then add the noodles, spinach, mushrooms, green onions, beef, sauce, and half of the sesame seeds. Stir-fry until the sauce cooks down, stirring frequently, 2-3 minutes. Season to taste, then sprinkle the remaining sesame seeds over the Japchae and serve.

Save Money & Make Your Own Mayo

The idea of making my own mayo was quite daunting. I thought I would never be able to recreate my very own Hellman’s “Real Mayonnaise.”

Making my own mayo was actually quite easy, cost-effective and best of all, free of junk! This recipe uses ingredients already found in a well-stocked kitchen: olive oil, egg, lemon, sea salt & mustard powder. 

I like to use it as a base for salad dressings or just slathering some on a grass fed burger. You can also flavour them. I like to blend the mayo with a whole roasted head of garlic for some creamy garlic mayo. My significant other prefers a spicy mayo mixed with cayenne pepper or Frank’s Red Hot Sauce. The variations are endless!

This Homemade Olive Oil Mayo is easily the best REAL mayo I have ever had. It’s probably a given when I say I will never buy another jar of mayo from the grocery store.

My go-to mayo recipe is from Melissa Joulwan (author of the Well Fed series and owner of theclothesmakethegirl.com). This recipe is embedded in my memory. Give it a try and let me know how it goes!

Homemade Olive Oil Mayo

Ingredients:

  • 1 egg
  • 2 tablespoons lemon juice @ room temp
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon salt
  • 1/4 cup plus 1 cup light-tasting olive oil (Not extra virgin)

Directions:

1. Place the egg and lemon juice in a blender or food processor. Let them come to room temperature together, about 30-60 minutes. Add the dry mustard, salt, and 1/4 cup of the oil. Whirl until well mixed – about 20 to 30 seconds.

THIS IS THE IMPORTANT PART!

2. The only remaining job is to incorporate the remaining 1 cup oil into the mixture. To do this, you must pour very slowly… the skinniest drizzle you can manage and still have movement in the oil. This takes about three minutes or so. Think about three minutes during a WOD; it’s a fairly long time. Breathe. Relax. Drizzle slowly.

If you’re using a blender, you’ll hear the pitch change as the liquid starts to form the emulsion. Eventually, the substance inside the blender will start to look like regular mayonnaise, only far more beautiful. Do not lose your nerve and consider dumping! Continue to drizzle.

If your ingredients were all at room temperature and you were patient, you will be rewarded!

NOTE: If you have a stick blender, you can simply place all ingredients in a blending jar, then whirl with your stick blender for about 30 seconds. Voila! Mayo is done.

Paleo Maple Sausage Anytime Patties

The Ultimate Sausage & Egg MichMuffin

I love making these sausage patties not just for breakfast, but anytime! Breakfast, brunch, lunch, linner, dinner, snack, bedtime snack, you get the point!

The sweetness of these sausage patties reminds me of Longanisa (Filipino Sausage) so I enjoy eating them with eggs and tomatoes! Paleo-silog? Enjoy!

Paleo Maple Sausage Anytime Patties

Yields: 4 sausage breakfast patties or 8 mini breakfast sausage patties

Ingredients:

  • 1 lb Ground Pork
  • 1 tbsp Pure Maple Syrup
  • 1/2 tsp Garlic Powder
  • 1 tsp Fennel Seeds
  • Pinch of Red Pepper Flakes (or more, if you like the heat!)
  • Pinch of Ground Cloves
  • Salt & Pepper to taste

Directions:

  1. Combine all ingredients in a bowl and mix well
  2. Form into patties
  3. Place a large cast iron skillet on medium-high heat
  4. Cook for 2-3 minutes on each side
  5. EAT!

How did I get into this Paleo business anyway? I read my cousin’s blog. 

After reading his entry back in 2010, I decided it was time to take control of my life… well my diet… at least! I was sick and tired of feeling sick and tired.

This is where my journey began and here I am now, living my life as the best version of me, a lot happier and not to mention 65 lbs lighter.

Time for a Spring Clean Up! The 30 Day Paleo Challenge.

I’ve been getting a lot of questions lately about “that diet” I’m on and if I’m still on it.

If you are not already familiar, I follow a Paleo Lifestyle. So yes, I’m still on “that diet.” Circa 2011.

So what does Paleo even mean? In short, this means NO grains, dairy or legumes.

With all these questions I thought it would be fun to host my first 30 Day Paleo Challenge! The Spring Clean Up Edition. This will begin on May 1st!

Who would be interested? Comment &/or Like if you would be interested in taking on this challenge with me.
